Jubei-Chan Vol. #1

* Go to the Extras menu. Press the 5 key. The "black and white guy" at the left of the screen will light up. You will then be able to view each ending scene that this guy appears in at the end of each episode.
* If you follow the instructions to get to the first piece of omake you reported, then pick through the faces until you get to the one that does NOT appear at the END of an episode but rather in the middle (it's one to the left from the one you start in), then tap the DOWN button about 4-5 times, two apparently American people appear next to the face. (update: these are actually pictures of people from POP/Cinram)

Jubei-Chan Vol. #2

* Go to extras and press down button until Jubei's eye patch light up. This will open a gallery with the cute little Yagyu Jubei sketches. The first picture should be of Yagyu appearing on Jiyu's eyepatch. On this image, press down 5 times--watch the icon in the left corner--and an image with two POP/Cinram staff members will appear--in super deform even and with little costumes.

* Go to extras and press the down button until the logo Jubei chan on Jubei-chan's face is highlighted. Select the logo and it will open a gallery with the little Yagyu Jubei sketches.

Jubei-Chan Vol. #4

* When in the extras menu, scroll down to the main menu sign post at the bottom.. while on it, hit the the left direction arrow and then right, which will then highlight/circle the little Jubei sketch guy (warning once you do this you freeze on it and will have to go through it, or else escape from extras menu) this will take you to the various ending stills with the Jubei sketch gallery.
